Pauillac is a very nice small town located on the Garonna mouth in the Gironde region of France.
Pauillac is famous for the wine the bears its name.
Pauillac is a very famous name among the Medoc wines that are produced in the Bordeaux area.
Château Latour, Château Lafite-Rothschild et Château Mouton Rothschild are the names of the three cru of Pauillac-Medoc.
The two most important grapes used to make this wine are Cabernet Sauvignon and Merlot.
The Cabernet Sauvignon grape, used for 75%, gives to the wine a rich body without to much alcohol and furthermore makes the harmony between bouquet and body.
The Merlot grape, added in percentage of 20%, confers to the wine the roundness that is one of the peculiarities of Pauillac.
Cabernet Franc (4%) and Petit Verdot (1%) are the other grapes.
The four grapes are destemmed prior the fermentation (to reduce the level of acidity) and put in separated thanks. When the fermentation is terminated each liquid, that it cant be yet called wine, is filtered and transferred into a vat where is kept for three weeks. Then the wine Master blends the four liquids, in the required percentage, in a barrel. The wine, now we can call it wine, is kept in the barrel for 3 years and the bottled. The bottles cant be sold before 5 years since their bottling.
Only the vintages with the appropriate characteristics are in the market labelled Pauillac- Château Latour the others have only the generic label Pauillac.
Im a lucky person as I have in my cellar few bottles of Pauillac- Château Latour.
1964: intense red color; fruity and spiced smell; taste of black fruits with a little too much of tannin; leaves the mouth clean. A sublime wine.
1983: purple red color; fruity smell; taste of mixed fruits; a little too much creamy body. An excellent wine not yet at its best.
