The Bottom Line: I recommend these pans to anyone who wants the convenience of a non-stick pan while still being able to use metal utensils is a big plus.

I bought my ScanPan pans May 97 and have used them for all my cooking. The pans have a special surface that is a mix between a non-stick (Teflon type) surface and a cast iron pan. It becomes seasoned with use like cast iron but is easy to clean.
Pros: They are a nice looking set of pans that have solid construction and no hot spots. You can use metal utensils without harming the non-stick surface. Cleanup is generally easy (more info below). Unlike most non-stick pans, the food clings to the pan while cooking allowing you to treat the pan more like a standard surface. I find that the surface is much better for de-glazing and frying than other non-stick surfaces. You can use the pans in the oven and dishwasher. The pans are quite durable. I have left one on the stove (empty) for 20 minutes causing no apparent harm.
Cons: It is hard to find a local retailer if you have problems with the pans. (Denver) The pans are heavy and it takes a while to heat them up. The pans change color with use so if you really like the gray frying pan realize that it will eventually be dark brown. The pots don't change color as much. Not as non-stick as a standard non-stick pan. Cheesy name makes it sound like an infomercial product.
Cleaning: They usually clean up easily. ScanPan recommends cleaning the pans while still hot and I would agree that this works a lot of the time. However, with sticky substances like egg or cheese I have to do some scrubbing. However, things were not always this easy. When I first got the pans they were very non-stick. After several months of use they became harder and harder to clean and I had to use the metal scouring pad that comes with the pans a couple of times. However, after a few more months the pans started to season and the non-stick qualities have returned. Now that I have had them over three years the frying pans are a very dark color and I haven't had anything stick for quite a while.
