Moo Shu Pork Pizzas

This recipe is delicious, easy, and totally different from anything you have ever had before. I love it when I make something and it looks like it could be served at a restaurant. Well this is one of those recipes.

Moo Shoo Pork Pizzas

Ingredients needed:

8 flour tortillas (8 inch size)
2 tsp Canola oil
1 pork tenderloin (around 10-12 oz cut into small strips)
1 Tbsp garlic and ginger
4 oz shiitake mushrooms or white mushrooms (sliced)
4 cups coleslaw mix (1/2 a 16 oz bag)
1 can 14 oz drained baby corn. (Cut length-wise)
1/3 cup seasoned rice-wine vinegar

Heat oven to 425 degrees. Place tortillas in a single layer on 2 large cookie sheets. These only take like 5 mins to bake so I put them in at the very end when the pork is almost done.

Heat Canola oil, pork, garlic, and ginger in a medium size skillet until pork is cooked through.

Put tortillas in the oven.

Add mushrooms for about two minutes then add coleslaw, corn, and vinegar. Mix until cabbage wilts and mushrooms are done.

Transfer to bowl and serve on Tortillas and you will love it. This recipe may sound intimidating but just cut everything up ahead of time and it will actually be very simple. Bon appetit.
