Slow Cooker Lasagna

Sep 08 '00

I love lasagna but have always hated making it because it takes so much time to make. Here is a great slow cooker recipe that I have used for years.

You will need:

1 box Rigatoni Pasta - cooked
1 1/2 lb.. hamburger - browned and drained
1 package sliced pepperoni
1 green pepper chopped
2 large pkgs. Mozzarella shredded cheese
1 large pkg. Cheddar/jack shredded cheese
2 large cans pizza sauce
1 tbl minced onion
1 can mushrooms

You can do this recipe two different ways. You can either layer the ingredients or you can mix everything together and place in slow cooker. I like to mix everything together but my mom layers it because she says that is how you make lasagna, you don’t mix it all together. Either way, it works. Whichever way you choose, always start with a layer of sauce on the bottom. Cook on low for 5 hours.

We like a lot of cheese in our lasagna, so I use the 3 packages, when my mom makes it she only uses one package of each. You can also use lasagna noodles and tear them apart to fit in the slow cooker but I like using rigatoni.

This is a recipe that you can play with and mix and match cheese or types of noodles. I love this recipe (and so does my family) and it also freezes well- if I have any leftovers!
